Foodie Friday: Corn Chowder

This soup has become a tradition for my mom and I.  They sell it at a local craft show my mom, her friend Ms. Sarah Ann, and I go each year... we always have so much fun!!  They serve the soup with chicken salad and poppy seed cake... YUM!!  There are a lot of ingredients... but don't let that intimidate you... it's very doable... and very very tasty!

Cheesy Corn Chowder
Ingredients:

-3/4 stick of butter
-2 c. chopped carrots
-2 c. chopped celery
-2/3 c. finely chopped onion
-6 TBS flour
-4 c. water
-1 tsp salt
-1 tsp. celery salt
-1/2 tsp. paprika
-1/4 tsp. black pepper
-2 (11oz) cans corn with red pepper (Mexicorn)
-5 c. sharp cheddar cheese
-2 (12oz) cans evaporated skim milk
-1 lb. smoked sausage, cut into 1/4 inch slices

Melt butter in a large pot over medium high heat.  Add carrots, celery, and onion.  Saute until soft (5 to 10 minutes).

Stir in the flour; slowly add the water stirring constantly until thick and bubbly.

Stir in salt, celery salt, paprika, pepper, and corn.  Reduce heat and cover.  Simmer for 20 minutes, stirring occasionally.

Gradually stir in cheese until it is all melted.  Stir in evaporated milk.  Add sausage.

Cook until warmed through, stirring occasionally.
